Lemon and Parsley Tofu Skewers - amazing on the BBQ, or as a week night dinner.
Ingredients
1.5 tablespoons agave (or anything sweet - e.g. maple syrup)
1.5 tablespoons olive oil
1 lemon zest
2 lemons, juiced
1.5 tablespoons Dijon mustard
3-4 tablespoons parsley, finely chopped
225 grams (one pack) extra firm tofu (I love @tofoo’s smoked tofu for this)
6 skewers(soak for 30mins if using wooden ones)
Steps
Make the marinade: Put the lemon zest, lemon juice, agave or maple syrup, olive oil, Dijon mustard and parsley, into a bowl or lidded tub. Shake or whisk to combine.
Prep the tofu: Tear the tofu into mouth-sized chunks. Keep them fairly chunky so they don’t break apart on the skewers.
Marinate: Add the tofu to the marinade and mix or shake gently until every piece is coated. Marinate for at least 30 minutes or ideally overnight in the fridge for the best flavour.
Skewer: Thread the marinated tofu chunks onto skewers. Set aside half of the leftover marinade for basting.
Cook: oven: Place the skewers in an ovenproof dish. Spoon over half the reserved marinade. Roast at 200°C (fan) until golden, turning and brushing with more marinade halfway through.
Cook: alternative methods: Instead of oven-only, you can fry the skewers until golden then finish in the oven for extra colour, or cook them straight on the BBQ from the start.
Serve: Serve with plenty of fresh salads and enjoy.
